A sweet & tangy lavender foam topping for iced tea, iced coffee, or drinks
A Springtime treat of a creamy cloud-like topping with sweet floral lavender syrup balanced by tangy notes from the addition of Cream of Tartar. It's a great compliment to iced drinks, though it can work with hot drinks (it will just melt faster).
FLAVORS: This Lavender Cream Foam Recipe, is fluffy and creamy with a sweet but refreshing floral lavender taste combined with mild tart & tangy notes that leaves you wanting more!
We made it with our iced Hendrick's Tea House Milk Tea and our iced Ceylon Black Tea, but it can also pair well with our Lavender Iced Tea (stay tuned for recipe).
For best results, be sure to let the foam thicken for 3 min., as instructed in the recipe.
What is Cream of Tartar? It's an acidic biproduct that occurs when grapes are fermented into wine. It's tangy and tart, often used in baked goods and frostings for a subtle tang flavor or whipped with egg whites to aid in stabilizing a fluffy shape. In our case, Cream of Tartar adds mild tart notes and helps form the fluffy foam texture.
Recipe: Lavender Cream Foam

Ingredients:
1/16 cup Heavy Whipping Cream
3/16 cup Half & Half (basically, you'll fill the H&H up to the 1/4 cup line after pouring the Whipping Cream)
1/8 teaspoon Cream of Tartar
5 teaspoons Lavender Syrup
teeny-tiny, pinch of table salt
Note: Using non-dairy milks may not yield the same texture, but can still be tasty.

Directions:
Prepare your desired iced drink (tea, coffee, etc.) and set aside.
Take out a pitcher and pour 1/16 cup of Heavy Whipping Cream (Tip: fill only about one-quarter of the 1/4 cup line).
Then, in the same pitcher, pour the Half & Half up to the 1/4 cup line. (it will be 3/16 cup of H&H in total)
Add 1/8 teaspoon Cream of TarTar.
Add 5 teaspoons Lavender Syrup.
Take a tiny bit of table salt and tap it into the palm of your hand. With the tip of your finger, lightly press into the salt granules. Then, sprinkle the salt that sticks to your finger into the pitcher. Discard the remaining salt left in your palm.
This uses less than "a pinch of salt." It is a very small amount - but it will be enough to bring forward all the flavors.
With an electric frother, froth the mixture for about 1 minute.
Then, let sit to stiffen for 3 minutes before serving. (Allow the cream of tartar to work its texturizing magic).
Scoop the foam with a spoon and gently top it over your beverage.
Note, some milk liquid may gather under the foam in the pitcher. You can pour it into the drink, if desired.
This recipe works best with iced drinks, as it will dissolve more quickly over hot drinks (but it will still taste good).
